With its fluffy texture, Swedish Oven Pancake is warm and comforting and is easily whipped together at any time of the day! Served with your favorite jam, some fresh fruit, or a drizzle of maple syrup, a Swedish Oven Pancake is sure to please the whole family!
Unlike traditional Swedish pancakes made in a hot pan or cast iron skillet, this pancake is more like a thick, baked custard and is made in a regular rectangular pann or gratin form.
It uses simple ingredients and extra eggs to act as a leavening agent, not unlike Dutch baby pancakes or German pancakes.
We eat Swedish oven pancakes weekly at our house, most often for breakfast, but most families serve it as a mid-week meal. This is my go-to recipe when I don’t have time to make regular pancakes, and it is the perfect breakfast recipe to feed a crowd.
Leftovers are delicious, re-fried in a hot pan with butter and served with savory fillings or some fresh fruit, making this a great recipe for a busy week.
Swedish Oven Pancake Recipe
This recipe serves 6.
You will need a large gratin form or two small ones.
Ingredients
280g / 2 cup Bread flour – High protein flour helps the pancake puff up, but you can still make a delicious pancake using all purpose flour. You an also swap out 1/3 of the flour for whole wheat or spelt flour if you wish.
4 tbsp Butter – you can use unsalted butter coconut oil if on a low-sodium diet
6 large eggs – at room temperature ( helps the pancake to puff up. )
1.5 tsp salt
1 tbsp sugar – I prefer to use brown sugar to add flavor, but traditionally white sugar is used
900ml / 4 cups of milk – at room temperature if possible.
Optional: If serving this pancake as a dessert, you can add a half cup sugar to the batter.
Method
1. Preheat the oven to 225°C /450°F. Place one large or two smaller gratin forms in the oven to preheat.
2. In a large bowl, mix the flour, salt, and sugar with the wet ingredients using a whisk or handheld beater until it becomes a smooth batter.
If whisking by hand it can be helpful to whisk half of the milk with the flour first. This helps to avoid lumps in the batter.
3. Using an oven mitt, remove the form from when the oven has reached temperature. Add the butter and swirl the form around to coat the bottom of the pan with the melted butter.
4. Pour batter into the hot buttery baking dish and place in the middle of the oven for 30 minutes or until golden brown. The bake time can vary from oven to oven, but keep watch for that perfect golden color.
It's important that you don't open the oven door until at least halfway through baking, as this will cause your pancake to collapse. It will sink as it cools leaving puffed edges!
Serving suggestions
The beauty of the Swedish Oven Pancake is that it can be served simply as square slices with just a sprinkle of powdered sugar or a spoon of Swedish Lingonberry Jam, Queens Jam, or simply raspberry jam.
Add fresh berries and slices of fresh fruit for a healthy snack.
It’s also delicious served as a dessert with vanilla ice cream or whipped cream and some grated chocolate!
Storage
Store leftovers in an airtight container and reheat with melted butter in a nonstick pan over medium heat.
Variations
Some of our favorite savory filings include bacon ( lay whole bacon slices across the top of the pancake batter or add chopped fried bacon to the bottom of the oven form before adding the batter to make a dish called ‘fläsk pannkaka’ meaning ‘pork pancake’) ) and cheddar cheese.
