Mini Banan Pancake Bites

As the banana cooks, it develops a sweet caramel flavor so there is no added sugar needed!  I hope you enjoy them as much as we do!

2 Ripe bananas   40g /1/3 Cup flour  1 Large egg 50ml / 1/4 cup milk  Butter or coconut oil  for frying. Optional: 1/4 tsp Vanilla powder

Ingredients:

1. Beat the egg together with the milk in a large bowl.

Method:

2. Sift the flour and vanilla powder in a medium bowl.

3. Add the dry ingredients to the wet ingredients and whisk to combine.

-Rest the batter for 20 minutes.

5. Peel and slice bananas.

-Heat the pan to medium heat and add a small amount of butter or coconut oil to the skillet.

4. Dip banana slices in batter.

-Use a fork to lift banana slices out of the batter, pausing to allow excess batter to run off the banana.

Fry each pancake for 2-3 minutes or until golden brown.

Cooked pancakes are best enjoyed hot and can be kept warm on a baking sheet in a warm oven.

These mini banana pancake bites can be eaten as breakfast, snacks, or as a sugar free dessert!  Serve with fresh berries, chopped fruit, maple syrup or icecream
