There’s a super easy alternative that only requires two ingredients and it’s a game-changer for your dinner table! Making Wild Garlic Sea Salt is as easy as it sounds and is a great way to preserve the flavour and colour of the wild garlic!
Wild garlic (Allium Ursinum), also known as ramsons or ramps, is a type of wild onion with a garlic note and a fresh, earthy aroma. The foraging season for wild garlic is short but you can usually pick it up in the grocery store and farmers markets if you don't have wild garlic growing nearby. This plant has been used for centuries for its medicinal properties, and modern research has confirmed many of its health benefits. A rich source of vitamins A and C, wild garlic is also high in antioxidants, which are compounds that protect against cellular damage caused by free radicals.

Making your own wild garlic salt is surprisingly easy, and it’s a great way to preserve the flavor of wild garlic so that you can enjoy it all year round. Here’s a simple recipe to get you started!
INGREDIENTS:

50g of Fresh wild garlic leaves – I prefer to remove the stalks as they contain a lot of moisture which slows down the drying process. Don’t throw the stalks away,! You can sauté them or use them to make Wild Garlic Pesto or Wilf Garlic Oil!
300g Coarse sea salt. You can also use finely ground sea salt but I prefer coarse salt for this recipe. ultimately, you can use any type of salt that you have on hand. We prefer Celtic Sea Salt because of its superior flavor and nutritional value.
YOU WILL NEED:
A food processor or pestle and mortar
METHOD
1. Remove any roots or debris from the wild garlic leaves. If necessary, you can rinse the leaves under cold water and use a salad spinner and a clean tea towel to pat them dry.

2. Roughly chop the leaves and place them in the food processor together with roughly half of the salt. If using a pestle and mortar, you can use less salt initially. Blitz to create a wild garlic paste.


3. Add the remaining salt and blitz briefly to combine. If you prefer a finer finishing salt, you can blitz a little longer.


4. Spread the salt blend on a baking tray or plate and leave it in a warm place to dry completely. I usually leave it on my countertop overnight or in the oven with the light on for a little added warmth. You may need to use a fork to break up the salt mixture as it dries, depending on the water content of the paste to begin with.


If you find the flavour to be too strong, you can mix in a few grams of salt to dilute the flavour.
Store in a lidded jar or tin at room temperature for up to 6 months. The salt will still be usable after 6 months but will begin to lose flavour.
HOW TO USE THIS SALT

The delicate garlic flavour of wild garlic salt makes it perfect as a finishing garnish for most savoury dishes!
Delicious on roast potatoes, mashed potatoes, scrambled eggs, boiled eggs, poached eggs.. basically any kind of eggs!


It also pairs beautifully with mild fish dishes like steamed or baked cod.
Added a pinch to salad dressings gives a mild garlic flavour that won’t overpower the other ingredients.
A perfect match for grilled meats, either as a finishing salt or as part of a bbq rub or marinade.

I strongly recommend that you taste your chili flakes to get an idea of how strong a flavour they have. Some chili brands are so mild that you can easily add more, and some are so spicy that it is enough with a few flakes.
CAN I USE DRIED WILD GARLIC FLAKES FOR THIS RECIPE?
Yes, you can! In fact, that is how we used to make this recipe.
Dried wild garlic has a much milder flavour, and doesn’t contain the same nutrients as fresh wild garlic but is a good alternative.
You can choose to follow the same instructions as this recipe, blitzing the dried garlic together with salt to create a fine salt that can be used for dusting. Or simply mix together the salt and wild garlic flakes, adding more flakes until you are satisfied with the flavour. Store at room temperature in a lidded jar or tin.
